Melon balls with mint-flavoured yogurt

Preparation: 2 1/4 – 3 1/4 hrs(including standing and chilling)

Serves: 6-8 people

Ingredients:

450ml (16fl oz) Greek-style yogurt

4 teaspoons clear honey

2 sprigs mint, chopped

2 melons

Method:

Mix together the yogurt, honey and mint in a bowl, then leave to stand in the refrigerator for 2–3 hours.

Halve the melons, remove and discard the seeds and scoop out as many balls of the flesh as possible with a melon baller.

Mix the melon balls with the yogurt sauce and pour the mixture into a large glass bowl.

Chill in the refrigerator for 10 minutes before serving.
